Protein Cross-linking

When proteins cross-link, they often form AGEs (advanced glycation end products).  MDA (malondialdehyde) is a substance that causes protein cross-linking and AGE formation.  With the formation of AGEs comes significant aging, resulting in everything from wrinkles to brain degeneration.  Studies have proven carnosine capable of preventing the cross-linking between proteins, thus protecting the body from AGEs.  One particular study indicated that carnosine is capable of inhibiting MDA-induced glycation and may actually decrease MDA levels.
